New Riviera 2807 Owner

Howdy folks!,
My wife, Liz (also new on this forum) and I have ourselves a 1985 Riviera 2807 that has captured our hearts but likely seen better days. We bought her at the end of the 2019 season and our first task was to get it out and stored. Sadly, the marina we used did not properly winterize it so we lost the entire 2020 boating season waiting; not only to COVID, but waiting for Crusader engines to be rebuilt and 4 manifold rebuilds. So now we have nicely rebuilt engines, it's on to the next projects: Replace canvas, find replacements for 4 of the plastic porthole windows and start replacing other systems, starting with plumbing.
We have a canvas guy coming but sure could use help from you experienced CYOs with the rest. For example, I have had no luck yet finding replacement plexi porthole windows. About half of ours are yellowed, cracked or just plain busted. Four are pretty messed up and need outright replacement. Thoughts are appreciated.
