I purchased a 2002 570 Voyager and am doing a lot of upgrades. I am going to have the flybridge seats reupholstered over the winter, I just need to bring them to the shop where they are going to do the work. The bottom pieces are easy to just lift out, but the backs are attached. If anyone has advice on best way to remove those I would appreciate it.

Can't really say for sure on your boat, but many times the seat backs have brackets on the back that slide into a receiver. To remove you lift/slide the seat back straight up. They do get stuck over time, dirt etc. Other times velcro. Have a close look.

Maybe someone with the same model can chime in.
