This is a project I am starting on as well on carver 356. After long decision process decided to go along with so called luxury vinyl plank flooring. Purchased couple boxes, waiting on warmer weather before I start as its pretty cold here now. I agree on the trimming around hatches, I think it looks better without. Depending on how well and clean I can make the cuts, I plan on using no trimming on hatches. Also on 356 there are lots of hatches, I am thinking of combining at least the 4 hatches over engines into 2 hatches, so there will be single hatch over each engine.

Are you using anything between the boat floor and the vinyl plank?

Not planning on it. I have not yet removed the carpeting, so I do not know what shape it is in. But I was told to use LVT adhesive to stick planks to floor. Although I am looking into the material usually placed under planks in normal installation. However, since it needs to be glued down, not sure I can use any material in between. I guess if I did I would have to glue both side of the material between the flooring and planks. I will post my results here when I do finally get to it before season begins hopefully.

I think without some sort of trim around the hatches you will be left with some pretty big gaps. The carpet is wrapped around the edges, I would guess it takes up close to 3/8" between backing, and fibers on each side of the joint, that would leave you with a 3/4" gap more or less. I doubt you can wrap the adhesive flooring without cracking the face on a tight 90 bend.
One of the reasons I didn't tackle this project yet.

While researching, I watched a video where a guy measured, cut and glued wood to fill the gap around the hatch cover, then glued the vinyl and then trimmed.

Yes that's why I am still in planning stage. Once I remove the carpet and find the actual gap size, I will see if I can patch with thin strips or may consider re-cutting a new hatch that's a perfect fit. later one would be last resort though. as far as planks I am talking about, they are fairly thick, minor bumps under it or edges will not be an issue. I will be doing the gaps around 1/8 inch or close to that as I possibly can. Definitely will be tricky project, but outcome should be nice.
